At Cleveland Whiskey, we push the boundaries of convention, build on great traditions and artfully blend science with craft to create unique and extraordinary, award-winning spirits
We put our heart and soul into what we make, we think creatively and push hard for real and meaningful innovation. Whiskies finished with woods other than oak and not only in a barrel, natural flavors without sugar or syrup, no artificial color.
Using a proprietary technology to mature our spirits, we take very young whiskey – aged in a barrel for less than six months and instead of continuing to keep the whiskey in the barrel, we take the liquid out. We take the staves from the barrel, cut and measured to control for oxygen content, surface area and moisture, and then add the wood into the whiskey in pressure capable stainless-steel tanks.
From there we take the miracle of nature and weather but reduce it down to a science: controlling for temperature changes, pressure, oxygen infusion and finally cavitation. Essentially, forcing the reaction between the wood and the whiskey.
This process is what allows us to use uncommon woods like Hickory and Black Cherry to finish our Underground bourbons. If you made a barrel out of these woods they would leak like a sieve. But they do make incredible, never-before-tasted flavor profiles for our bourbons. Something no one else in the market can do.

One trip to our historic distillery and you’ll begin to understand why our Bourbon has come to be so mellow. Nestled in the quiet Kentucky countryside near Lawrenceburg, and on the banks of the scenic Salt River, the Four Roses Distillery makes the trip to this very mellow place all that more rewarding. The Four Roses Distillery was built in 1910 and features a unique Spanish Mission-Style architecture rarely seen in Kentucky. It is listed on the National Register of Historic Places and operates continuously, except for the summer months. In 2012, the Four Roses Distillery Visitor Center underwent a significant renovation. The remodeled, 5,000-square-foot visitor center and gift shop was part of an extended expansion on the distillery property. The Distillery Visitor Center showcases antique bottles, vintage advertising and other memorabilia, along with displays of equipment and ingredients that illustrate the distilling process. Founded by husband and wife team, Scott Blackwell and Ann Marshall, High Wire was born of a desire to introduce small batch, handmade, craft spirits to South Carolina. A lifelong “serial entrepreneur,” Scott recently sold his former business, a natural and organic bakery called Immaculate Baking Company, to General Mills. The couple quickly began developing business plans for the distillery, an endeavor that allowed them to combine their passion for small business with their love of high quality artisan spirits.
High Wire Distilling is producing a distinctive line of small batch spirits using specialized ingredients. Scott, a Culinary Institute of America trained baker, applies his knowledge of artisanal grains and culinary techniques to the spirits he creates. With a main focus on local, unique ingredients, the distillery also features an apothecary area where experimental bench formulas can be created and tested in a small-scale format. In addition to their core products, High Wire also produces a series of limited edition creations only available at certain times of the year.
The location for High Wire Distilling is as unique as the spirits—a rustic 6,000 square foot warehouse located on Upper King Street. Spacious with a vintage industrial feel, the Production Area features a 20ft high, barreled ceiling and a beautiful, hand-hammered, copper still as a focal point. High Wire’s Tasting Room features warm, rough-hewn cypress walls with large windows through which one can view the distilling equipment and process. Kings County Distillery is New York City’s oldest operating whiskey distillery, the first since prohibition. Founded in 2010 by Colin Spoelman and David Haskell, we make handmade moonshine and bourbon out of the 115-year-old Paymaster Building in the Brooklyn Navy Yard. We use New York grain and traditional distilling equipment to make distinctive whiskey. Our moonshine and bourbon have both won “Best in Category” from the American Distilling Institute’s Craft Spirits Awards and our bourbon won two silver medals from the inaugural American Craft Distillers Association Awards in 2014. We only distill whiskey for our label and we never buy bulk whiskey from any other source. First located in a 325 square-foot room in East Williamsburg, Kings County began as the smallest commercial distillery in the country, with five 24-liter stainless steel stills making whiskey seven days a week, 16 hours a day. In 2012, we moved into the Paymaster Building in the historic Brooklyn Navy Yard, just steps from legendary site of the Brooklyn Whiskey Wars of the 1860s and the former distillery district of the waterfront. The distillery was built to exact specifications: Our copper gooseneck whiskey stills were fabricated in Scotland; our wooden fermenters were built locally by Isseks Brothers, a firm responsible for many of the rooftop water tanks around New York. The distillery grows corn and barley at a small farm onsite, and spent grain is recycled as compost and pig feed.

The soulful, rich flavors of our no-compromise whiskey begin with our use of only heirloom and heritage grains. Modern agricultural has no interest in these low-yield, finicky grains, yet we could not create the singular profile of each Laws Whiskey without them. We are dependent on the two family-owned farms – the Cody’s in the San Luis Valley and the Ohnmacht’s out on Colorado’s eastern plains – willing to cultivate these specialized grains for us.
Our whiskey chose Colorado. Don’t get us wrong, we think Colorado is a cool place to live, but that’s not why Laws is here. Our terroir-driven whiskey requires the rarified thin air, the hot days and cool nights of the Rocky Mountain region, and the rugged growing conditions of the San Luis Valley and eastern plains that stress our grains just enough to deepen their flavor.
We always have and always will distil every drop we bottle. While our whiskey aged, we didn’t sell any whiskey for our first three years. Time is as critical of an ingredient as our heirloom grains. Every mash bill gets its own optimal distillation process, and we deploy time-intensive sour mash fermentation. We are the first Colorado distiller to bottle bonded whiskeys. For us, these steps are not extra, they’re mandatory to creating Laws Whiskey.
At Laws, no person has the title ‘Master Distiller.’ We believe it takes the talents, smarts, quirks and obsessive passion of every Laws co-worker, aka The Village, to make our whiskey. In the Laws Village, you are part of something so much greater than self.

Located in Shively, a section of Louisville with a legendary whiskey heritage, Michter’s Distillery is a 12.8 acres, 87,000 square foot facility. The Old Pogue Distillery is located at 716 W 2nd Street, Maysville, KY on the same grounds where the historic H.E. Pogue Distillery was located. Julian Van Winkle, III is the third generation Van Winkle to be involved in the Kentucky Bourbon whiskey business. His grandfather, who was known as "Pappy", started the family in the business back in the 1870s when he was a salesman for the W.L. Weller & Sons liquor wholesalers in Louisville. He later built and was president of the Stitzel-Weller Distillery in Louisville, which opened its doors on Derby day, 1935. Their prominent brands were W.L.Weller, Rebel Yell, Cabin Still and Old Fitzgerald bourbons. Julian's father, Julian, Jr., operated the distillery until the family sold it in 1972. At that time Julian, Jr. started the Old Rip Van Winkle brand with some of the whiskey he made while he was at Stitzel-Weller. Julian joined his dad in 1977. Julian continued to operate the business after his father's death in 1981. Julian now has his whiskey produced for him under his grandfather's original wheated bourbon recipe, and ages and bottles the Old Rip Van Winkle brands in Frankfort, Kentucky. His whiskeys are the highest rated whiskeys available. The 20-year old "Pappy Van Winkle's Family Reserve" has received a rating of 99 by the Wine Enthusiast magazine. His 13-year old rye whiskey was the first premium aged rye whiskey. In 2001 Julian's son Preston joined the business with his dad. He is the fourth Van Winkle to sell these premium bourbon and rye whiskeys.

In 2005 Tuthilltown Spirits brought the tradition of small batch spirits production back to the Hudson Valley. Tuthilltown’s spirits, including whiskeys, vodkas, gins and other unique innovative spirits are among the first legally produced in New York since Prohibition. New York’s first Bourbon, HUDSON BABY BOURBON, is distilled from 100% New York corn. Our INDIGENOUS VODKA and HALF MOON GINS are produced from New York apples and wheat. The handmade spirits, which start at the farm distillery as raw grain and fruit, are made without added flavor or color and are not chill or carbon filtered. For 220 years Tuthilltown Gristmill, a landmark which is listed on the National Register of Historic Places, used waterpower to render local grains to flour. In 2003, Ralph Erenzo and Brian Lee created Tuthilltown Spirits LLC. They converted one of the mill granaries to a micro-distillery. Two and a half years later, Tuthilltown Spirits produced their first batches of vodka from scraps they collected at a local apple slicing plant. Today, Tuthilltown Spirits distills vodkas from apples grown at orchards less than 5 miles away and the highly awarded HUDSON whiskeys, using grain harvested by farmers less than 10 miles away.

Woodford Reserve officially reopened its visitor center at the Woodford Reserve Distillery in Versailles, Kentucky, on April 9th, 2014 after completing a renovation project. Visitors may enjoy a panoramic view of the scenic Distillery grounds from the new tasting room which is lined with copper stools. A fireplace with copper detail separates the lounge area from the tasting room. The tabletops in the visitor center and tables in the tasting room are crafted using reclaimed wood from a barn on the Distillery property. Coffee tables in the main area of the visitor center are built from a cypress vat once used at the Distillery.

1897 was a revolutionary year for American spirits as the Bottled In Bond Act passed through the halls of Congress. This Act established strict standards that must be met by producers in order to label their spirits "Bottled in Bond". These standards required production and distillation of the spirits to occur within one season, aging for four or more years at a federally bonded warehouse, bottling at 100 proof and extensive labeling with information about its producer and origin.
